White Fish Fillets

boneless and frozen fillets, skin on, 8 oz. each
Extra Virgin Olive Oil, cherry tomatoes, Gaeta olives, capers, thyme, a couple of minced garlic cloves…………. and, Beyond Belief Gourmet’s White Fish Fillets………, what a feast!

Lets’ start our feast, for six, this time.
You will need:
6 Beyond Belief Gourmet’s White Fish Fillets, skin on
3 tbsp extra virgin olive oil
5 oz. pitted Gaeta or Kalamata olives, coarsely chopped
3/4 lbs. ripe cherry tomatoes, coarsely chopped
3 tbsp capers
2 – 3 minced garlic cloves
1 tbsp. chopped fresh thyme
Salt & freshly ground white pepper
Soak the capers in water at room temperature for about 1 – 2 hours. Change the water a couple of times and, taste, to check the balance between the taste of the caper and the residual salt. If you use medium or large capers, the soak times increases, and the water must be changed more frequently. In a separate bowl, use the same procedure for the olives.
Sprinkle the Beyond Belief Gourmet’s White Fish Fillets with salt and white pepper and let it rest at room temperature for about 15 – 20 minutes.
In a medium bowl, toss the tomatoes, capers, olive oil, garlic, and thyme and season with salt and pepper.
Preheat the oven to 450 °F. Brush the base of an ovenproof casserole with olive oil.
In a cast-iron skillet or a steel skillet (do not use non-stick), heat the olive oil over medium-high to high. Place the fish fillets in the pan, skin-side down, and cook, pressing down on each fillet with a spatula to prevent the skin from curling, until the skin is crisp, about 2- 3 minutes. Transfer the fish from the skillet to your ovenproof casserole, skin-side down. Top with your tomatoes, olives, capers, garlic and thyme mixture and drizzle with the remaining olive oil.
Bake for 15 minutes or until fish is just through. Remove from oven.
Texture: velvety flakes.

Store in freezer at a temperature of 0 or minus ⁰F.
Thaw each package of White Fish Fillets in cold water for 30 – 45 minutes. Then rinse and dry. Cook to your desire.
